Arepas with Carnitas and Sweet Potato



Meet AREPAS! Golden fried cornmeal pockets stuffed with all the fillings you could ever want, like roasty sweet potatoes, black beans, red onion, cotija, and magic green sauce. These are legit guuuud. Also so easy. Double win. You could easily cook this at home, watch the instruction video below.

FYI: Arepas are fried or baked yellow or white corn pancakes, either plain or with a filling. Most Venezuelans and Colombians eat them as part of their daily diet in place of bread, mostly at breakfast, at least in Colombia (wikibooks.org).
