Creamy Pumpkin Spaghetti with Garlic Kale
October got me like once again, all over that creamy pumpkin spaghetti + garlic kale combo. Made totally from scratch, really simple, bumped up with those garlicky greens - I make this one every year. You could easily cook this at home, watch the instruction video below.
FYI: Thriving even in frost, kale is an easy-to-grow green that keeps on giving: cut the smaller, paler green leaves to anchor or mix into fresh garden salad; use the larger, dark greens for stir-fries, pizza topping, or soup, while the plant keeps right on growing (mercola.com).
