Healthy Sweet Potato Skins

FYI: Cultivation of sweet potatoes, which are native to Peru, dates back to 750 BCE. Discovered by Columbus, sweet potatoes, often (wrongly) called yams, belong to the Convolvulaceae, or morning glory plant family. Although they're soft and creamy enough to be put in pies and called dessert, sweet potatoes are also a surprisingly nutritious vegetable. "Sweet potatoes are high in vitamin A, vitamin B5, B6, thiamin, niacin, riboflavin, and, due to their orange color, are high in carotenoids" (Mercola.com and Live Science).
